Q: How do I know when beef is ready to order?
A: Our primary contact with our customers is though email (email@example.com). When we send cattle to the butcher we send an email to our customers to let them know that we are ready to start reserving the beef. If we run out of available beef before you get to order we will gladly put you at the top of the list for the next time. If you or someone you know would like to receive our emails, just send us an email with your name and contact information and we’ll add you to our list.
Q: How much does your beef cost per pound? What is the ‘hanging weight’?
A: All of our beef is currently $6.00 a pound, but the way the amount of pounds is measured varies slightly between ground meat and the other cuts of meat.
Ground meat is sold simply by the pounds of beef that you are purchasing.
All of our cuts of meat are currently sold by the 1/8, 1/4 or 1/2 of an animal, usually a steer. That meat is sold by the hanging weight at the butcher. Hanging weight is the weight of the side of an animal as it hangs at the butcher with all of the cuts of beef still intact. Approximately 25% of that weight is extra fat and bones that will be cut away during the butchering process.
This price does not include the butchering cost, which is $55 for an eighth, $100 for a quarter, and $150 for a half.
Q: How many pounds of beef and what kinds of cuts of meat can I expect to receive if I want to purchase 1/4 of a steer?
With our current butcher, orders of ¼ or larger can be customized if you pre-order. When you reserve your beef we will email you the cutting instructions form to fill out with your preferences. The butcher will do his best to meet all of your requests, but they cannot be guaranteed.
When an eighth is butchered the cuts are left to the discretion of the butcher. Each eighth will vary depending on the steer, and what the butcher believes to be best. The following is an example of what was included in one eighth that was about 50 pounds total: (12) 1-lb. packages ground beef, (6) 1-lb. packages of stew meat, 3-lb Sirloin Steak, 2.5-lb. Sirloin Tip Steak, (4) 1-lb. T-Bone Steaks, (4) 1-lb. Rib Eye Steaks, .5-lb. Filet, 2.5 lbs Short Ribs, 3-lb. Bottom Round, 2-lb. Rump Roast, 2-lb. Chuck Roast, 3-lb. Chuck Roast, and 4-lb. Round Bone Roast.
Also, please note that when we sell the beef this way we take all the cuts that are produced from a single animal and divide them up equally in the proportions that it is being purchased in. Therefore, you are not receiving a ‘true’ quarter of the animal (i.e.: the right, front quarter), but instead are receiving ¼ of the roasts, ¼ of the steaks and so on. This way you are able to get a wider variety of cuts of meat.
Q: How Much freezer space will I need?
A: An estimate for the amount of space the beef takes up is about the size of either 1 to 1 1/2 cases of water or reams of paper for an eighth. Therefore a quarter is about 2- 3 of those boxes in size, and 4-6 boxes for a half.
Q: How is the beef packaged?
A: All of our beef is butchered at the USDA inspected butcher, Jamison Packing near Latrobe, PA. All of the beef comes frozen and in vacuum sealed packages, so it will stay fresher longer in your freezer.
Q: How do I get the beef that I ordered?
A: We think that it is important for our customers to see where their food is coming from so, after we pick up the beef from the butcher we have a scheduled pick-up day at our farm. (If you cannot make it that day, just let us know, and we will work with you to schedule another time). We are located about ten minutes off Rt. 19, just between Cranberry Twp. and Zelienople, PA.
