Home We sell our grass fed beef in two forms: split quarters and ground. When a market steer has reached maturity and is harvested, it can be cut into all of the steaks, roasts, etc. An animal divided into four equal portions to be consumed by four families. It usually ends up being a little more than 100 lbs. per family. Some larger families take a side of beef (half the animal, or two of the quarters), and some customers group together with a few friends to divide up a quarter among themselves to keep the volume manageable.

Our ground beef is much different than what you may be used to if you are a new convert to the grass based movement. In our constant herd genetic improvement plan, we are always pulling out an animal here or there that has less desireable traits. The meat is great when put into the grinder for ground beef. When the whole animal is ground, all parts, including the steaks and roasts are mixed together resulting in a very lean meat.

Our beef is harvested and processed at Wrights Meat Packing in Fombell, PA. You can look into them on the web if you like, but they are a USDA inspected packing facility and therefore meet strict inspection guidelines concerning sanitation and safety. It should be noted that their facility is only USDA certified for the actual slaughtering process, and is state certified in their cutting and fabrication processes. Since they are not USDA certified for the fabrication process as well, they are unable to provide custom labelling.
